DAY 3: Vegan, Wheat-Free Diet

DAY 3:

Sorry again for the delay in posting this blog, but I was occupied last night with a very exciting event! My boyfriend and I had the privilege of seeing two of our very good friends get engaged last night! I am so happy for Beth and Jeremy!!! Mazol Tov to you both!!! So yes, we were out celebrating and I did not have time to finish writing the blog, or to post it. 

For breakfast I had the same thing as the day before. Some oatmeal, with a slight change of ingredients. Instead of raisins in the oatmeal I had dried blueberries, and instead of a papaya I ate a yummy banana.  Refer to the DAY 2 Breakfast section, for pictures and more details about my morning meal.  
I also wanted to highlight an awesome product that I use almost every day.  Its called SO DELICIOUS Coconut Milk Creamer.  I LOVE to drink coffee every morning.  If I don’t have my one cup, everyone better watch out!  My mother has been trying to get me to stop drinking coffee for a while now, but I just love the stuff.  I only have one cup of day, which is nothing compared to most consistent coffee drinkers.  Since I have known about my Lactose intolerance for a while now, I have been using this creamer as a substation for milk long before I decided to do this diet.  This creamer has a delicious flavor, and it doesn’t taste like coconut milk at all.  Its super sweet, so no need to add any sugar to the coffee, and you only need a little bit of the stuff.  I am not one of those people that can drink my coffee plain, without any sort of cream and sugar, so I have found that this product is a great alternative.  


For lunch I had a light spring salad with tons of veggies.  
The ingredients in the salad:

– Eden Organic Spring Salad Mix
– Raw Beets
– Carrot
– Heart of Palm
– Cucumber
– Garbanzo Beans
– Black Olives

I used BRAGG GINGER & SESAME Salad Dressing to complete my salad.  This salad dressing is so yummy and healthy. Its packed with tons of goodies and it also contains Amino Acids; but be careful, because the salt content in this stuff is kind of high, so watch your intake! 

For dessert I had AMANDE Cultured Almond Milk. I use it to replace yogurt, but it doesn’t taste like yogurt at all, even though the packaging may give you the illusion that its yogurt. I actually like this stuff better than yogurt, and its made out of ALMOND MILK!! It comes in several flavors; blueberry, strawberry, peach, cherry, and of course my favorite……coconut! 


I didn’t have much time to make dinner, since I had to be down at PNC park for the special occasion I had mentioned earlier, so I made a quick snack.  I threw together some leftover Garbanzo Beans and Heart of Palm that I had from my salad earlier, and made this…
The ingredients in the Heart of Palm salad:

– Heart of Palm
– Garbanzo Beans
– Black Olives
– Tomato
– Olive Oil
– Curry Powder
– Salt + Pepper


After the big proposal, which I got some great pictures of, we went out to celebrate at a restaurant downtown called Sonoma Grill (see website below).  I wasn’t super hungry, because I ate quite a bit of that Heart of Palm Salad earlier, and Garbanzo Beans really fill you up. I ordered their Mediterranean Platter minus the feta cheese, and it had olives, hummus, and tabbouleh on it.  It was pretty yummy, but the desserts were incredible! I have to admit, when they brought out the multiple desserts in celebration of our friends engagement, my mouth started to water.  I gave in and had to try some of them, even though the waiter (who was awesome by the way) was nice enough to bring out some sorbet for me since I couldn’t eat any of the desserts.  But did I fool him! I tried everything from the home-made doughnut, to the chocolate cake and the chocolate creme brûlée, which in my option was the best creme brûlée I have ever had! I didn’t go crazy with the desserts, but I tried almost every one of them…minus the ice cream because I didn’t want to chance getting a stomach ache.  So yes, I gave in, but it was all in celebration of a momentous occasion.  Plus I wanted to get my last bit of bread in before Passover!
